Gluten-Free Green Tea Mini Matcha Cookies

I was never, like, a super huge fan of green tea—coffee was always my drink of choice and, as a writer, it seemed fitting and I never tried to chance it. But green tea has so, so many health benefits that, being the vaguely healthy, questionably alcoholic gal I am, I always wanted to incorporate it into my diet. So, when I heard about Matcha Green Tea, which has 10x more antioxidants than regular Green Tea, I was like, yeah sure, I'll give it a go.

Geuys. I don't know what to say. This stuff is life-changing.

I think my first encounter with Matcha Cookies happened at a cookie swap hosted by Spoon University. Yes, yes—among the many occupations I procrastinate work for, I am also a writer at Spoon University. I happened to land an internship with them over this summer, and it's been a wild, fulfilling experience. Though I "live" in New York—that is to say, struggle to exist on a daily basis in a city that wants to kill everyone in it—I go to the University of Iowa, so I write for the Spoon Iowa chapter. They're a lovely bunch of peeps, feel free to swing by them eventually.

The matcha brand I used came from WholeFoods, so you know this shit is legit. The Republic of Tea devotes themselves to crafting only the best Matcha tea with quality ingredients. The result? A coffee-lover conversion. One sip, and I knew I had to try to make something using their exquisit powder. So, drawing inspiration from my memories of those delicious cookies at that Spoon even one Christmas, I made these Green Tea Matcha Cookies. Bite-sized and healthy, you'll consume all the health benefits of matcha tea in tiny, tasteful packages.

Gluten-Free Green Tea Mini Matcha Cookies

Instructions

  • Preheat oven to 375

  • Combine all the flours and dry things in a bowl, while doing the same to the wet ingredients in another. Then, bring the two together in a glorious matrimony. Bring tissues; there will be happy tears.

  • Place in the fridge for an hour. You'll probably forget and leave them for two, but that's cool.

  • Plop them down on a greased baking sheet. I made them into tiny balls and then flattened them a bit. They don't really spread, so you don't have to worry much about spreading them out super far apart.

  • Bake for twelvish minutes, or until bottoms are golden brown.

Prep Time: 10 Mins

Cook Time: 12 Mins

Servings: ~35 Mini Cookies

Ingredients

  • 1 Cup Quinoa Flour
  • 1/2 Cup PB2
  • 4 Tsp Matcha Tea
  • 1 Tsp Baking Powder
  • 1/3 Cup Unsweetened Cashew Milk
  • 1/2 Cup Unsweetened Applesauce
  • 1/2 Tsp Vanilla Extract
  • 5 Packets of Stevia
