Eggless, Oil-Free Banana Pumpkin Bread

As you can probably tell, I do a lot with old bananas. They're just, ya know, hanging around there, ya know? And they look so lonely. That's why I paired them with pumpkin. This recipe is the essence of fall.

Even though it's, like, ninety degrees at the tongue-tip of July. But that's whatever. 

 It turns out I actually own a  bread pan ?!?! It was a wild discovery.

I think one of my favorite recipe authors would have to be Chocolate Covered Katie. All her healthy desserts for one—ugh, I could spend hours picturing all the goodness only a mug and a microwave away. So when I stumbled upon her recipe for Pumpkin Banana Bread—two ingredients I happened to have in abundance due to my *cough* lack of self-control in the grocery store *coughcough*—I knew I just, I just hadda.

I changed the recipe around a bit by using PB2 and Fiber One Cereal in place of some of the flour. The result? Just a slight hint of nutty goodness. It's a subtle change, but it makes such a difference and adds another level of taste to the bread. It's not super sweet, but it remains a healthy, satisfying treat.

A treat you can have for every meal, because who's to stop you, really?

Eggless, Oil-Free Banana Pumpkin Bread

Instructions

  • Preheat oven to 350

  • Combine all the flours and dry things in a bowl, while doing the same to the wet ingredients in another until they become this weird, thick, orange-yellow mush. This is fine.

  • Combine the two mixtures together. You may need to add a little more milk if it's too dry.

  • Pour into a loaf pan, and toss (not like, literally though) into the oven. Leave in there for 30 mins, then cut the heat but leave the bread in there for 10 more mins. To suffer.

  • Take out, let cool, and devour.

Prep Time: 10 Mins

Cook Time: 40 Mins

Servings: 12 Slices

Ingredients

  • 1 1/2 Banana, Mashed
  • 1/2 Cup Pumpkin Puree
  • 1/2 Cup Spelt Flour
  • 1/2 Cup Fiber One Cereal
  • 1/3 Cup Cashew Milk
  • 5 Stevia Packets
  • 1 Cup PB2
  • 1 Tbsp Cinnamon
  • 1 Tsp Baking Powder
  • 1 Tsp Baking Soda
