Frozen Pea Pancakes
I don't think there's anything especially appealing about frozen peas. The name alone evokes childhood memories of being forced to remain at the table until you've "eaten all your peas". So when I heard about a recipe turning the frozen vegetable into pancakes, well, I had to check it out.
I don't actually have anything against peas. I'd consider myself something of a pescatarian, so veggies and I are nearly inseparable. That being said, peas usually aren't my go-to. I think it's time we all give them a little love, don't you agree?
Yeah, I think so too.
I used Spelt Flour to add a bit of nutty flavoring to these grinchy-pancakes. They come out pretty small, and I imagine they'd make a great themed breakfast for children during the holidays. Maybe add some Christmas sprinkles for effect.
Frozen Pea Pancakes
Instructions
Cook peas according to the directions on the bag.
Add peas and onion to a food processor and whirl until smooth.
Transfer pea mixture to a bowl and add the egg white.
Add the flour and mozzarella and stir.
Spoon evenly-ish onto a pan and cook until golden brown, about two minutes on each side.
Serve with grinch-inspired enthusiasm (End-of-the-movie Grinch, not the beginning douche).
