I like to think I'm a patient person.

I mean, I've been on several road trips and, because I go to college so far away, have experienced some awful waits with delayed flights. I don't freak out. I don't get super antsy. I just breath, relax, and remind myself that, hey, in a few hours or whatever, I probably won't even be thinking about how sucky it was to wait so long.

But when it comes to food, well. I have an issue.

You see, whenever I'm making something in the kitchen, my stomach starts to grumble in anticipation. I kinda-sorta tend to snack while I cook, because I just can't help it. That's why I try to cook either when

  1. I'm not insanely hungry, or
  2. I know the recipe is super fast

Enter the mug cake.

This particular Mug Cake is made by combining PB2 with handfuls—I mean, carefully measured-out portions—of Fiber One Cereal. It's a little on the tough side because it technically doesn't use any flour, but it's super healthy and filled with—prepare yourself for this huuuuge shocker—fiber. So if you're looking for something quick and not guilt-inducing, this is for you.

I'll even look away while you add the chocolate chips. You're secret is safe here.

Fiber One and PB2 Mug Cake

Instructions

  • Combine all the ingredients into your favorite mug. Don't have one yet? Browsing the super cute collection at Modcloth is a guilty pleasure of mine.

    • Make sure all of the cereal bits are coated, otherwise you'll get a bunch of them just kinda chillin' together and not really incorporated into the cake.

  • Throw that concoction into the microwave for about a minute and a half, or until the top is springy and not mush.

  • Fork that babe.

Ingredients

  • 2 1/2 Tbsp PB2
  • 1/2 Cup Fiber One Cereal
  • 1/4 Tsp Baking Soda
  • 3 Tbsp Egg Whites
  • Optional Ingredients Include
    • 1 Packet of Sweetener (I used Truvia Natural Sweetener)
    • 1 Tbsp Chocolate Chips
    • A Handful of Blueberries (and white chocolate chips)
    • 1 Tbsp of Cinnamon
