Watermelon "Tuna" Poke Bowl with Savory Sweet Potatoes

As an avid seafood lover, I've had my fair share of swooning over the poke bowl craze; living in New York City, where literally every cuisine has a storefront, I found more poke places than I could ever hope to experience. My favorites thus far are Pokebab in good 'ol Willsburg and The Poke Spot, the latter largely because it's right next to Strand.

But, I figured I could try making my own because ¯\_(ツ)_/¯ why the hell not? I'll just casually burn down my kitchen, no big deal.

This poke bowl is actually totally vegan, gluten-free, and low calorie. It's super healthy! I used cauliflower rice, which you can buy in the frozen food section when you're super lazy. Remarkably, I had enough motivation to make my own. Shocker, I know, I know. I'll accept my metal now.

I also had a few sweet potatoes lying around, which I threw in there. I used some mediterranean sea salt spice to roast them with, because you need to feel fancy every now and then.

Instead of Tuna--though I, as mentioned above, I love seafood--I used watermelon.

That's right. You heard me.

If you slice up a watermelon, drizzle soy sauce over it, and bake it in the oven for a while, it comes out kinda like fish. It definitely retains a fruity tang, but the continuous heat from the oven draws out the water, allowing it to soak up whatever you put it with. A miracle, I know.

Anyway, I hope you give this recipe a go. It sounds intimidating, but believe me--it's worth it.


Prep Time: 20 Mins

Cook Time: 60 Min

Servings: 4

Ingredients

  • 1 Small Cauliflower
  • 1 Small Watermelon
  • 4 Small Sweet Potatoes
  • 2 tsp Olive Oil
  • 3 Tbsp Soy Sauce (Reduced Sodium is best)
  • Toppings, Including:
    • Sesame Seeds
    • Scallions
    • Seaweed
    • Mediterranean Sea Salt

Watermelon "Tuna" Poke Bowl with Savory Sweet Potatoes

Instructions

  • Preheat oven to 400

  • Grate your cauliflower, or use a store-bought, microwave brand. Whatever works for you

  • Dice your sweet potatoes into cubes, and cut your watermelon into triangles

  • Line a baking sheet with the watermelon. Combine Soy Sauce and 1tsp of oil in a bowl, and spread evenly over the top. Bake for an hour, flipping halfway.

  • Place diced Sweet Potatoes into a bowl, combine with desired seasoning (I used mediterranean Sea Salt) and 1tsp Oil. Spread onto baking sheet and roast for 25 minutes, or until edges are dark

  • Place cauliflower in bowls, top with Watermelon, sweet potatoes, and toppings!
